1 kg of shaved white cabbage
1 tbs clove
3 tbs salt
!!! SAVE a few sheets of cabbage + the end joint too
this can be used instead of a weight
toss ingredients into a bowl
add 3 tbs of salt / per kg cabbage
– mix 5-10 min (until there’s quite a bit of juice)
– fill all into some small jars
– press down (with weight or the sheets of cabbage + end joint)
- 3-7 days
ferment at room temperature
open/burp the jar ones in a while! - 2-3 weeks
ferment further in fridge
